Episode 1: A Winemaker's Perspective
To better understand the philosophy behind my processing methods, I wanted to give you a little background into how I approach coffee processing as a former winemaker. If you’ve been in the specialty coffee industry for more than 5 minutes, you've probably heard some of the comparisons to the wine industry.
I studied winemaking and spent 9 years in the industry before making the switch to coffee, and this gave me a deep understanding of the useful, and not so useful comparisons.
The pictures below show a typical day in the life of an Enologist, on the left, the messy job of preparing blends and on the right, setting up tastings of those blends for the winemaking team (please forgive the poor quality photos, it was 2011 before I had joined Instagram and cared about having objects in focus).
In this first episode I discuss the similarities and differences in the processing methods of wine and coffee, and how they can impact perception and education within coffee processing.
